<li>Remove the mussels from their shells.</li>
<li>Dry them well on a cloth.</li>
<li>Make Villeroi sauce with the cooking liquor of the mussels.</li>
<li>Dip the mussels in the Villeroi sauce.</li>
<li>Chill the coated mussels thoroughly.</li>
<li>Beat 2 eggs lightly.</li>
<li>Add a little salt and pepper.</li>
<li>Add 2 teaspoons oil.</li>
<li>Dip the mussels in the egg mixture.</li>
<li>Coat the dipped mussels with flour or fine bread crumbs.</li>
<li>Dip the mussels again in the egg mixture.</li>
<li>Give them a final coating of crumbs.</li>
<li>Dry the mussels in hot butter or oil until nicely browned on both sides.</li>
