<p>1. Put the beans in a large bowl</p>
<p>2. Cover them with cold water and soak them overnight</p>
<p>3. Drain them</p>
<p>4. Put the beans in a saucepan together with salt and the bouquets garnis</p>
<p>5. Cover them with fresh cold water</p>
<p>6. Bring the pan to the boil</p>
<p>7. Cover the pan with a lid and simmer gently for about 1 and 1/2hours or until tender</p>
<p>8. Drain the beans thoroughly and stir in the mayonnaise, parsley and onion while they are still warm</p>
<p>9. Leave the beans to cool</p>
<p>10. Turn the bean salad into a serving dish and garnish with the sprigs of parsley</p>

<p>(serves 12 people)</p>
<p>Salt<br />
2 bouquets garnis<br />
4 level tablespoons chopped parsley<br />
1 medium onion, finely chopped<br />
1 lb (450g) flageolet beans<br />
1/2 pint (285ml) mayonnaise<br />
Small sprigs of parsley (garnish)</p>
