<p>1. Skin and bone the halibut</p>
<p>2. Cover the trimmings with boiling salted water and simmer the stock for 30minutes</p>
<p>3. Put the fish through a food processor</p>
<p>4. Add the constarch, flour, and salt</p>
<p>5. Grind the mixture in the food processor again</p>
<p>6. Add the egg, pepper and nutmeg</p>
<p>7. With a potato masher, work in gradually the cups of milk</p>
<p>8. Shape the mixture into walnut-sized balls</p>
<p>9. Simmer the balls in the stock until they are cooked through</p>

<p>2 lb fresh halibut<br />
1 tablespoon cornstarch<br />
1 tablespoon flour<br />
1 tablespoon salt<br />
1 beaten egg<br />
1/8 teaspoon nutmeg<br />
