<p>1. Make a small slit in each date using a sharp pointed knife, and remove the stones</p>
<p>2. Fill the cavities with the almond paste and close the dates again</p>
<p>3. Melt the chocolate in a bowl over a pan of hot water and with the aid of two forks, dip the dates in the chocolate</p>
<p>4. Coat evenly and brush off any surplus on the edge of the bowl</p>
<p>5. Dry the chocolate covered dates on sheets of waxed or non-stick paper</p>
<p>6. Just before set, decorate the dates with well-drained cocktail cherries cut in half or with pieces of shelled walnuts</p>
