<p>1. Cut the chickens up into small portions</p>
<p>2. Rub each piece with a damp cloth</p>
<p>3. Season the pieces with salt and pepper and sprinkle them with the flour</p>
<p>4. Heat the oil in a large pan</p>
<p>5. Fry the chicken pieces over high heat until golden brown (turn the heat frequently)</p>
<p>6. Transfer the chicken pieces to a earthenware casserole dish</p>
<p>7. Add the garlic and the bouquet garni</p>
<p>8. Add the cup of white wine, the brandy and the tomatoes</p>
<p>9. Cover the casserole tightly</p>
<p>10. Put the casserole dish on the lowered heat and cook gently until the chicken is almost tender (turn them several times with a wooden spoon)</p>
<p>11. After 30minutes, taste for seasoning and add the mushroom caps</p>
<p>12. Cook for a further 10minutes or until the chicken is tender</p>
<p>13. Sprinkle the dish with the chopped parsley</p>

<p>2 small chickens,about 2 lb each<br />
Salt and pepper<br />
A little flour<br />
4 tablespoons oil<br />
2 large cloves garlic, finely chopped<br />
Bouquet garni<br />
1 cup white wine<br />

2 large tomatoes, peeled and cut<br />
12 peeled mushroom caps, cut in quarters</p>
