<p>1. Sift the flour and salt into a mixing bowl</p>
<p>2. Cut the butter into pieces and rub it into the flour mixture until the mixture is crumbly</p>
<p>3. Grate the cheese and blend it into the pastry mixture</p>
<p>4. Knead the pastry into a stiff dough using some cold water</p>
<p>5. Divide the pastry in half</p>
<p>6. Roll out one half of the pastry onto a floured surface and use it to line a pie plate</p>
<p>7. Peel, core and slice the apples</p>
<p>8. Pile them over the pastry and sprinkle some sugar over the pastry</p>
<p>9. Roll out the remaining pastry</p>
<p>10. Moisten the edge of the lining and cover the pie with the pastry</p>
<p>11. Press the edges down in order to seal them</p>
<p>12. Make an air vent in the center</p>
<p>13. Beat the egg lightly together with the tablespoons of milk</p>
<p>14. Brush the pie with the egg mixture</p>
<p>15. Bake the pie for 35 to 40minutes in the center of the preheated oven</p>
