										<content:encoded><![CDATA[<h2>Cheese Puffs Recipe:</h2>
<p>1. Sieve the flour and set it aside on greaseproof paper</p>
<p>2. Put the butter and water in a large pan and heat gently until the butter has melted</p>
<p>3. Raise the heat</p>
<p>4. When the liquid boils, pour in the sieved flour</p>
<p>5. Beat the mixture with a wooden spoon until it is smooth and leaves the sides of the pan</p>
<p>6. Let the mixture cool (until you can hold the sides of the pan)</p>
<p>7. Beat in the eggs one by one</p>
<p>8. Continue beating the mixture until it is glossy</p>
<p>9. Stir in the mustard, grated cheese and the paprika</p>
<p>10. Season to taste with salt and pepper</p>
<p>11. Put the oil in a separate frying pan</p>
<p>12. Heat the oil to 375F (190C)</p>
<p>13. Put teaspoons of the mixture into the hot oil one by one but in batches</p>
<p>14. Fry the teaspoon mixtures for about 5minutes until they are puffed up and brown</p>
<p>15. Remove the puffs with a slotted spoon and drain them on absorbent kitchen paper</p>
<p>16. Keep the cooked puffs warm in a low oven while frying the remainder of the mixture</p>
<p>17. Pile the hot cheese puffs onto a plate and sprinkle them with the Parmesan cheese and paprika</p>
<h2>List of ingredients required:</h2>
<p>(makes 12 to 16 puffs)</p>
<p>Salt and freshly ground pepper<br />
2 and 1/2 oz (65g) plain flour<br />
150ml water<br />
2 oz (50g) butter<br />
1/4 teaspoon paprika<br />
Oil for deep-frying<br />
1 and 1/2 oz (40g) grated Parmesan cheese<br />
2 eggs<br />
1 tablespoon mustard</p>
