<p>1. Separate the lettuce leaves and cut off any coarse stems and damaged leaves</p>
<p>2. Wash the leaves and dry them thoroughly with a dry cloth</p>
<p>3. Remove the lower stems of the watercress and wash the leaves</p>
<p>4. Cut a slice from the top and bottom of each orange before removing the peel and all white pith</p>
<p>5. Thinly slice the oranges across</p>
<p>6. Arrange the lettuce in the center of a platter with the orange slices and pineapple rings around the edge</p>
<p>7. Arrange the cottage cheese on the fruit and garnish with sprigs of watercress</p>
<p>8. Coarsely chop the walnuts and sprinkle them over the cheese</p>
