<p>1. Cut off any fat from the steaks and trim them into neat shapes</p>
<p>2. Dust the steaks lightly with the seasoned flour</p>
<p>3. Heat the oil and the butter in a heavy-based pan over moderate heat</p>
<p>4. Fry the beef steaks for about 10minutes until they are brown on all sides</p>
<p>5. Lift the steak slices onto a serving dish and keep them warm</p>
<p>6. Add the ginger wine to the pan and let it boil slightly while scraping up the pan juices with a spatula</p>
<p>7. Reduce the heat and let the mixture simmer for about 5minutes or until the wine is syrupy</p>
<p>8. Stir in the lemon juice and the cream</p>
<p>9. Simmer the mixture for a further 3minutes or until the sauce has a pale coffee colour</p>
<p>10. Season to taste with salt and pepper</p>
<p>11. Pour the sauce over the meat and garnish each piece with a lemon twist sprinkled with chopped parsley</p>

Seasoned flour<br />
1 teaspoon olive oil<br />
6 tablespoons ginger wine<br />
3 tablespoons double cream<br />
1 dessertspoon lemon juice<br />
2 oz unsalted butter<br />
4 beef steaks, each a quarter inch thick and weighing about 3 oz</p>
<h4>Garnish:</h4>
<p>4 lemon twists<br />
1 dessertspoon chopped parsley</p>
