<p>1. Cut the fillet of beef into thin strips</p>
<p>2. Sprinkle the beef strips with salt and pepper</p>
<p>3. Place the beef in the refrigerator or in a cool place for 2hours</p>
<p>4. Make a sauce by blending 1 tablespoon of flour with 2 tablespoons of butter over<br />
gentle heat until the mixture bubbles and is smooth</p>
<p>5. Gradually stir in the cups of beef stock and cook for 2minutes until the mixture begins to thicken</p>
<p>6. Strain the sauce through a fine sieve into a saucepan.</p>
<p>7. Add the sour cream alternately with the tomato juice and stir constantly</p>
<p>8. Let the mixture simmer gently without boiling</p>
<p>9. In a separate pan, fry the strips of beef and the grated onion in the remaining 3 tablespoons of butter</p>
<p>10. When the meat is brown, pour it into the sauce and let it simmer gently for 20minutes</p>
