<p>1. Place each slice of beef between sheets of greaseproof paper and flatten it with a rolling pin</p>
<p>2. Trim the ham slices to fit the beef slices</p>
<p>3. Place the ham slices over the beef slices</p>
<p>4. Spread the ham slices with peeled and crushed garlic</p>
<p>5. Chop the eggs, raisins and the skinned salami then place them in a bowl</p>
<p>6. In the bowl, blend in the cheese, parsley, nutmeg and oregano</p>
<p>7. Season with salt and pepper</p>
<p>8. Divide the mixture equally over the beef and ham slices</p>
<p>9. Fold over the long sides to keep the stuffing in place and roll the slices up</p>
<p>10. Tie the parcels with fine string</p>
<p>11. Place the rolls in a buttered ovenproof dish</p>
<p>12. Pour over the stock and wine and cook in the center of the preheated oven for about 30minutes</p>
<p>13. Add the bay leaves, cloves and Marsala then cook for a further 30minutes</p>

<p>(serves 6 people)</p>
<p>Salt and black pepper<br />
1/2 pint beef stock<br />
1/2 pint dry white wine<br />
4 bay leaves<br />
12 thin salami slices<br />
3 cloves garlic<br />
12 thin slices beef sirloin<br />
12 thin slices cooked ham<br />
2 tablespoons Marsala wine<br />
4 bay leaves<br />
6 cloves<br />
1 oz unsalted butter<br />
5 oz raisins<br />
2 oz grated Parmesan cheese<br />
8 level tablespoons of finely chopped parsley<br />
1/2 level teaspoon grated nutmeg<br />
1/2 level teaspoon oregano<br />
4 hard boiled eggs</p>
<p>The oven should be preheated at a temperature of 375F (190C)</p>
