<ol>
<li>Select 3 plump broilers.</li>
<li>Remove the backbones.</li>
<li>Neck with a sharp knife so that the halves will lie flat on the grill.</li>
<li>Place the chicken halves in a shallow pan.</li>
<li>Sprinkle them with salt.</li>
<li>Make a marinade with 1 cup olive oil, 1/2 cup white wine, 1 cut clove of garlic and 6 crushed peppercorns.</li>
<li>Marinade the chickens for 30 minutes.</li>
<li>Place the chicken, skin down on the grill about 5 inches from the coals.</li>
<li>Broil for 25 to 30 minutes.</li>
<li>Turn the halves frequently to cook them evenly.</li>
<li>Baste often with marinade.</li>
<li>Melt 1/4 pound butter in a saucepan.</li>
<li>Add 6 shallots, finely chopped, 1 tablespoon each of chopped chives and chervil or parsley.</li>
<li>Also add 1 teaspoon chopped sweet basil.</li>
<li>Bring the butter to a boil.</li>
<li>Pour it while foaming, over the chicken.</li>
