<p>1. Peel the avocados using a stainless-steel knife to prevent the flesh from discolering</p>
<p>2. Cut the avocados into quarters and remove the stones</p>
<p>3. Cut the flesh into thin slices and place them in a bowl</p>
<p>4. Pour the lemon juice over the avocado slices</p>
<p>5. Cut a slice from the top and bottom of the grapefruit and orange so that they stand flat on a board</p>
<p>6. Cut the fruits downwards in narrow strips through the peel and pith and remove</p>
<p>7. With a sharp knife, cut between the flesh and segment skins</p>
<p>8. Put the flesh into a large bowl and squeeze the segment skins over the fruit so that no juices are wasted</p>
<p>9. Carefully blend the avocado and lemon juice with the citrus fruits</p>
<p>10. Spoon the mixture into individual serving dishes and garnish with skinned orange segments and sprigs of mint</p>
