<p>1. Wash and core the apples</p>
<p>2. Chop the apples into rough chunks</p>
<p>3. Put the apple chunks in a bowl and sprinkle them with the lemon juice to prevent them from browning</p>
<p>4. Chop the walnuts and set aside about 1/3 for the garnish</p>
<p>5. Pour the soured cream in a separate bowl and stir in the apples and the walnuts</p>
<p>6. Remove any damaged and coarse outer leaves from the cabbage</p>
<p>7. Wash the cabbage thoroughly and cut out the thick center stalk</p>
<p>8. Shred the cabbage finely</p>
<p>9. Scrub the celery and thinly slice it</p>
<p>10. Remove the leaves and roots from the radishes and slice them evenly</p>
<p>11. Wash the raisins and cut them in half</p>
<p>12. Stir all the ingredients into the soured cream mixture</p>
<p>13. Season to taste with salt and pepper</p>
<p>14. Spoon the salad into a serving dish</p>
<p>15. Garnish with the reserved walnuts</p>

1/4 pint soured cream</p>
