<p>1. Wash the zucchini thoroughly</p>
<p>2. Top and tail the zucchini</p>
<p>3. Bring a large pan of salted water to the boil</p>
<p>4. Put the zucchini in the water and let them boil for about 5minutes until they are soft</p>
<p>5. Drain the zucchini immediately in a colander and rinse them in cold water</p>
<p>6. Cut the drained zucchini cross-ways into 1/2 inch thick slices and put them in a shallow serving dish</p>
<p>7. Make a dressing from the oil and lemon juice and season with salt and pepper</p>
<p>8. Pour the dressing over the zucchini</p>
<p>9. Add the chopped chives and blend thoroughly</p>
<p>10. Chill the salad for a few minutes before serving</p>
