Whitebait Recipe:

1. Toss the whitebait gently in the seasoned flour to coat them thoroughly

2. Heat the oil in a large frying pan

3. Fry the fish in batches in the oil for about 2minutes

4. Drain the fish on crumpled absorbent paper

5. Serve the whitebait hot, garnished with lemon wedges and parsley sprigs

4 oz seasoned flour
2 lb whitebait
