Spicy Brown Rice Salad Recipe:

1. Put a large pan of salted water on the heat

2. Whisk in the turmeric

3. Add the cardamoms and rice

4. Bring the pan to a boil

5. Cover the pan and cook gently

6. When the rice is tender, remove it from the heat and drain well

7. Put the rice in a large bowl

8. Mix the garam masala with the vinaigrette

9. Pour the mixture over the rice, mix well and leave it to cool

10. Remove the cardamom pods from the rice

11. Stir in the sunflower seeds, red peppers and cucumber and mix them well

12. Taste and adjust the seasoning if necessary

8 cardamom pods
2 level teaspoons ground turmeric
3 level teaspoons garam masala
2 oz (50g) sunflower seeds
2 red peppers, seeded and diced
1/4 pint (150ml) vinaigrette
1/2 cucumber, diced
Freshly ground black pepper
1 lb (450g) brown rice
Salt
