Smoked Chicken and Mango Salad Recipes:

1. Remove and discard the skin from the smoked chickens

2. Cut the chicken into small pieces and place them in a large bowl

3. Peel the mangoes and cut them into slices (remove the stone)

4. Reserve the best mango slices for the garnish

5. Mix together the mango, chicken, green peppers, radishes and the water chestnuts

6. Add the mayonnaise and mix well

7. Season with salt and pepper to taste

8. Turn the salad onto a serving dish and garnish with all the reserved mango slices

(serves 12 people)

2 smoked chickens (about 1.1kg each)
3 ripe mangoes
2 seeded and diced green peppers
1 bunch radishes, sliced
14 oz (400g)tin water chestnuts, drained and sliced
450ml mayonnaise
Salt and freshly ground black pepper
