Shoofly Pie

Shoofly Pie Recipe:

  1. Line a 7-inch pie plate tin with pie pastry and bake slightly.
  2. Work lightly together as for pastry 3/4 cup fine dry crumbs,
  3. Add 1/4 cup flour, 1 teaspoon cinnamon.
  4. Add 1/4 teaspoon nutmeg.
  5. Add 1/8 teaspoon ginger and 1/4 cup butter.
  6. In a separate pan add 1/4 cup hot water to 3/4 cup light molasses mixed with 6 well-beaten eggs.
  7. Pour this filling into the crust and sprinkle the crumbs over it
  8. Bake in a moderately hot oven until the pie is lightly browned and reduce the heat to 325° F. to bake for 20 minutes longer.
