Roast Fresh Ham Recipe

  1. Remove the skin of the ham, rub with salt and pepper on all sides and let it stand for 1 hour at room temperature before roasting.
  2. Add onion stuck with cloves, carrots, celery and garlic, to the roasting pan.
  3. Pour melted butter over the ham.
  4. Bake in a hot oven for about 30 minutes, reduce the heat to moderately hot, continue to cook.
  5. Baste the ham several times with the wine for 25 per pound until it’s well done.
  6. Pour off the excess fat and add the flour to the pan while stirring well.
  7. Gradually add the white stock and the brandy.
  8. Cook for 5 minutes.
  9. Correct the seasoning.
  10. Carve the ham on a serving platter and pour half of the sauce over the slices.
  11. Garnish with parsley and serve with the rest of the sauce and a side dish of applesauce.
