Risotto With Mushrooms Recipe:

  1. Melt 4 tablespoons butter in an earthenware casserole.
  2. Add 4 tablespoons beef marrow.
  3. Add 1 onion, finely chopped.
  4. Cook until the onion colors.
  5. Add 1 1/2 cup sliced mushrooms.
  6. Cook for 5 minutes longer.
  7. Add 2 cups rice.
  8. Cook, stirring constantly until the rice begins to take on color.
  9. Pour in 3 cups beef stock
  10. Add salt and pepper to taste.
  11. Mix everything well together.
  12. Simmer the rice,stirring from time to time for 20 to 25 minutes until the liquid is absorbed and the rice is tender.
  13. Just before serving, sprinkle the risotto generously with freshly grated Parmesan cheese and 4 tablespoon melted butter.
