Pumpkin Custard Recipe:

1. Mix the sugar, salt, cinnamon and the ginger together

2. Add the sugar mixture with the following ingredients and mix well: pumpkin and the lightly beaten eggs

3. Stir in the cup of cream and the grated rind of orange

4. Pour the mixture into buttered custard cups and set the cups in a pan of hot water

5. Bake the custard in a moderately slow oven of 325F (160C) for about 40 minutes or until a knife inserted near the center comes out clean

1 cup cooked, pureed pumpkin
2 eggs, lightly beaten
1/2 cup brown sugar
1/2 teaspoon salt
1/2 teaspoon cinnamon
1/4 teaspoon ginger
1 cup cream
Grated rind of half an orange
