Potato Pancakes Recipe:

1. Wring the grated potatoes in a clean and dry cloth to remove any excess moisture

2. Mix the potatoes, corned meat, onion and bacon together in a large dish

3. Season the mixture with salt and pepper

4. In a separate dish, blend the flour into the egg yolks

5. Add the flour mixture to the potato mixture and stir well

6. Heat enough oil in a pan until it is hot

7. Shape the potato mixture into 6, 3inch wide cakes

8. Cook the cakes over high heat until they are golden brown (only turn them once)

9. Drain the cakes thoroughly on kitchen absorbent paper

10. Keep the fried batch warm while frying the remaining pancakes

List of ingredients required:

3 beaten egg yolks
1 small grated onion
Oil for frying
Salt and pepper
1 and 1/2 level tablespoons of plain flour
1 and 1/2 lb grated potatoes
4 oz corned beef
2 rashers streaky bacon
