Potato with Basil Salad Recipe:

1. Scrub the potatoes clean, but do not rub off the skin

2. Plunge the potatoes into a pan of lightly salted boiling water

3. Let the potatoes simmer for about 10 to 15minutes until they are just tender when pierced with a knife

4. Drain the potatoes well and leave them aside to cool

5. Finely chop the basil leaves and mix them with the yoghurt, lemon juice and the honey

6. Season to taste with salt and pepper

7. While the potatoes are still slightly warm, stir them into the basil sauce and mix them well so that they are evenly coated

8. Chill the dish in the refrigerator

9. Before serving, mix the dish well again

2 and 1/2 lb (1.1kg) small fresh potatoes
Large handful of fresh basil leaves and 20g or 2 level tablespoons of dried basil
150ml natural yoghurt
1 tablespoon lemon juice
1 tablespoon clear honey
Salt and freshly ground black pepper
