Pineapple Custard Recipe:

1. Peel and grate the fresh pineapple

2. Strain the juice from the pulp

3. Combine the pineapple juice and the sugar and bring the mixture to a boil

4. Boil the mixture vigorously for about 10 minutes

5. Remove the pan form the heat

6.Pour the syrup gradually over the 3 beaten egg yolks while constantly beating

7. Return the mixture to the heat and cook over low heat while stirring until the custard coats the spoon (do not let it boil)

8. Cool the mixture

9. Put the grated pineapple in a serving dish

10. Fold the stiffly beaten egg whites into the cooled custard and pour the custard over the pineapple

11. Chill and serve with a topping of whipped cream sweetened to taste
