Pears cooked in red wine

Pears cooked in red wine recipe

  1. Put the red wine into a large stainless steel saucepan with the sugar, orange and lemon juice and the spices.
  2. Heat gently until the sugar has dissolved, then bring to the boil for 1 minute.
  3. Carefully peel the pears, leave the stalks on.
  4. Put the pears into the spiced wine.
  5. Cover and look gently until the pears are just tender to be pierced with the tip of a knife.
  6. Turn the pears frequently during cooking.
  7. Using a slotted spoon, transfer the pears to a serving bowl and set aside.
  8. Bring the wine to the boil, then boil gently until it is reduced by about half.
  9. Pour the reduced wine over the pears.
  10. Allow it to cool, then cover and chill.
  11. Serve with lightly whipped cream.

Ingredients required:

  • 70 cl bottle of red wine.
  • 175 g (6 oz) granulated sugar
  • strained juice of 1 large orange.
  • strained juice of 1 large lemon.
  • 10 cm (4 inch) piece of cinnamon stick.
  • 6 allspice.
  • 6-8 large ripe, but firm pears.
  • lightly whipped cream, to serve.
