Paprika Schnitzel Recipe:

  1. Sauté 2 pounds veal scallops in 6 tablespoons butter.
  2. Transfer the meat to a serving platter.
  3. Add 2 finely shopped shallots to the butter in the casserole.
  4. Sauté the shallots until golden.
  5. Stir in 1 tablespoon flour mixed with 1/2 tablespoon paprika.
  6. Gradually add 1 cup hot light stock and 1/4 cup dry white wine.
  7. Stir constantly.
  8. Continue to cook, stirring, until the sauce is thickened.
  9. Lower the flame.
  10. Simmer for about 10 minutes.
  11. Stir in 1/2 cup thick sour cream.
  12. Heat but do not boil.
  13. Stir in a dash of lemon juice.
  14. Pour the sauce over the veal.
