Nectarine Fritters Recipe:

To make the batter:

1. Sift the flour in a bowl

2. Stir in the following ingredients: melted butter, warm water, cognac, salt, and the beaten egg yolk

3. The batter should be the consistency of thick cream and fold in 1 stiffly beaten egg white just before using the batter

Continue with the recipe as follows:

1. Peel, halve and stone the nectarines

2. Sprinkle the nectarines with the lemon rind

List of ingredients required:

6 nectarines
Grated rind of 1 lemon
3 tablespoons sugar
1/2 cup Madeira
Fritter batter
Oil for frying

For the fritter batter:

3/4 cup flour
1 tablespoon sugar
1 tablespoon melted butter
1/4 cup warm water
2 tablespoons cognac
A pinch of salt
1 beaten egg yolk
