Minted Fruit Salad Recipe:

1. With a sharp knife, peel the oranges and grapefruit and remove all the white pith

2. Hold the fruit over the bowl and cut out each segment of fruit discarding all the white pith and membrane

3. Squeeze the membrane over the bowl and extract as much juice as possible

4. Halve the melon, remove the seeds, cut off the skin and dice the flesh

5. Add the melon to the orange and grapefruit

6. Repeat the process with the papaya

7. Add the mint and toss the salad lightly together

8. Turn the salad into a serving dish

9. Cover the dish tightly with a double wrapping of kitchen foil and chill for at least 1hour before serving

10. Garnish the bowl with sprigs of fresh mint

(serves 12 people)

3 grapefruit
6 large oranges
1 large lemon
2 papayas
2 level tablespoons chopped fresh mint
Sprigs of fresh mint (garnish)
