Mexican Hot Soup Recipe:

1. Peel and finely chop the onion

2. Cut the stalk off the pepper, remove the seeds and finely chop it

3. Melt the fat in a large pan

4. Fry the onion until it begins to color

5. Add the beef and continue frying until it is well browned

6. Add the following ingredients to the pan: tomatoes, beans, peas and the chopped pepper

7. Stir in the stock and mix thoroughly

8. Season to taste with chili powder and a little salt

9. Cover the pan and let it simmer for 30minutes

10. Allow the contents to cool then put them through a liquidizer

11. Just before serving, re-heat the soup

12. Garnish the soup with the shredded lettuce

1 large onion
Salt
14 oz tinned or dried red kidney beans
1/4 pint stock
1/2 lb minced beef
2 oz butter
1 green or red pepper, chopped
14 to 16 oz tinned tomatoes
8 oz tinned or dried thick peas
1/2 level teaspoon of chili powder
Lettuce (garnish)
