Mackerel with Gooseberry sauce

Mackerel with Gooseberry sauce Recipe:

1. Make the staffing by adding the ingredients together (add the egg last to bind the staffing)

2. Clean and bone the mackerel and fill them with the staffing

3. Secure the staffed mackerel with wooden cocktail sticks

4. Brush the fish with melted butter and grill them under moderate heat for about 8minutes on each side

5. Make the sauce by cooking all the sauce ingredients together until the gooseberries pop open

6. Serve the fish with the sauce

List of ingredients required:

4 mackerel
Butter

For the stuffing:

4 heaped tablespoons white breadcrumbs
1 level tablespoon chopped parsley
Grated peel from a lemon
1 lightly beaten egg
Nutmeg
Salt and black pepper

For the sauce:

1/2 lb gooseberries
3 fluid oz water
2 level tablespoons caster sugar
1 oz butter
1 tablespoon fresh chopped fennel
