Herrings in Oatmeal Recipe:

1. Scale, wash and clean the fish

2. Cut the heads off and remove the backbones

3. Inside each herring, sprinkle some salt and pepper

4. Close the fish to their original shape

5. Dip the fish in the milk

6. Coat the fish evenly and firmly with the oatmeal

7. Heat the butter in a frying pan

8. Fry the herrings over gentle heat for 10minutes on each side

9. Lift the fish from the pan and arrange them on individual serving dishes

10. Spoon a little of the butter over each herring and garnish with the lemon wedges

4 oz unsalted butter
4 level tablespoons coarse oatmeal
3 to 4 tablespoons milk
Salt and black pepper
4 small herrings
Lemon wedges (garnish)
