Ham Mousse with Spinach Recipe:

1. Put the cooked ham in a liquidizer or food processor

2. Season with salt and pepper (optional)

3. With a wooden spoon, work the egg whites into the mixture

4. Force the mixture through a fine sieve into a bowl

5. Set the bowl in another bowl of ice

6. Very gradually work in the cups of heavy cream

7. Fill a buttered ring mold with the mousse

8. Set the mold in a baking pan in an inch or two of hot but not boiling water

9. Bake in a moderate oven of 350F (180C) for about 45minutes or until the mousse is firm
10. Remove the mold from the hot water and let it stand for a few minutes

11. Unmold the mousse on a serving platter and surround it with the croutons

12. Fill the center with conical mound of the spinach and serve

Triangular croutons
