Halibut Casserole

Halibut Casserole Recipe:

1. Wipe and skin the halibut

2. Butter an ovenproof casserole dish

3. Place the halibut in the dish and cook for about 15minutes in the middle shelf of the preheated oven

4. Remove the dish from the oven

5. Sprinkle the onion over the fish

6. Mix the cream and lemon together

7. Pour the lemon mixture over the fish and dust the top with paprika

8. Cover the dish with a lid or foil

9. Return the dish to the oven and cook for a further 20minutes, basting it twice with the cooking liquid

10. Trim and slice the mushrooms

11. Sprinkle the mushrooms and the shrimps over the fish

12. Cook for a further 15minutes and baste twice again

13. Transfer the fish to a warm dish and pour over the liquid

List of ingredients required:

2 lb piece halibut
1 heaped tablespoon finely chopped onion
3 oz peeled shrimps
1/4 lb button mushrooms
2 oz unsalted butter
2 heaped teaspoons paprika
Juice of half lemon
1/2 pint double cream
Puff pastry crescents (garnish)

The oven should be preheated at a temperature of 325F (160C)
