Grilled Halloumi Cheese with Mint

Grilled Halloumi Cheese with Mint Recipe:

1. Turn the grill on medium heat

2. Strip the leaves from the bunch of mint

3. Chop enough leaves to make 2 level tablespoons of chopped mint then set it aside

4. Lay the mint stalks in the base of the grill pan and lay the rack over the top

5. Brush the rack well with cooking oil

6. Cut the halloumi cheese into cubes of about 25mm

7. Place the cheese cubes on the oiled rack and sprinkle with the half chopped mint

8. Place the pan under the preheated grill and cook until the cheese softens and colours slightly (do not overcook)

9. While the cheese is cooking, mix the remaining chopped mint with the olive oil, garlic and black pepper to taste.

10. To serve, spoon the grilled cheese onto small serving plates and sprinkle with the flavoured oil

11. Garnish with the lemon wedges and serve with warm pitta bread

500g Halloumi or feta cheese
4 tablespoons olive oil
2 cloves crushed garlic
Freshly ground black pepper
Wedges of lemon (garnish)
