Gazpacho Recipe:

  1. Rub a glass bowl with a cut clove of garlic.
  2. Peel, seed and lightly chop 6 large ripe tomatoes and 2 cucumbers.
  3. Add the tomatoes and cucumbers to the glass bowl.
  4. Add 1/2 cup minced red or green sweet pepper and onion.
  5. Pour 2 cups of fresh tomato juice over the vegetables.
  6. Pour over 1/3 cup olive oil and 3 tablespoons lemon juice.
  7. Season the gazpacho to taste with salt, pepper and a dash of Tabasco.
  8. Chill thoroughly.
  9. Serve the gazpacho in individual chilled glass bowls.
  10. Add an ice cube to each.
  11. Sprinkle the soup generously with chopped parsley.
