Fish Balls Recipe:

1. Skin and bone the halibut

2. Cover the trimmings with boiling salted water and simmer the stock for 30minutes

3. Put the fish through a food processor

4. Add the constarch, flour, and salt

5. Grind the mixture in the food processor again

6. Add the egg, pepper and nutmeg

7. With a potato masher, work in gradually the cups of milk

8. Shape the mixture into walnut-sized balls

9. Simmer the balls in the stock until they are cooked through

2 lb fresh halibut
1 tablespoon cornstarch
1 tablespoon flour
1 tablespoon salt
1 beaten egg
1/8 teaspoon nutmeg
1/8 teaspoon pepper
2 cups milk
