Creamed Spinach

Creamed Spinach Recipe:

  1. Clean and cook 3 pounds of spinach.
  2. Drain, pressing out as much water as possible.
  3. Chop the spinach very finely.
  4. Purée it in a blender or force it through a coarse sieve.
  5. Melt 2 tablespoons butter in a saucepan.
  6. Add 2 teaspoons flour.
  7. Cook the roux until it begins to turn golden.
  8. Stir in the spinach.
  9. Cook until it s quite dry.
  10. Season with 1/2 teaspoon salt.
  11. Add a grating of nutmeg if desired.
  12. Stir in 1/2 cup rich milk or cream.
  13. Bring the mixture to a boil.
  14. Cook it for a few minutes longer,
  15. Brown small triangles of bread n butter.
  16. Garnish the spinach with the browned bread.
  17. May also garnish with quartered hard cooked egg if desired.
