Coconut Wafers Recipe:

1. Grease 2 or 3 baking trays

2. Cream the butter and sugar together in a large bowl until the mixture is light and fluffy

3. Beat the syrup in the butter mixture

4. Add the lemon juice, sifted flour and the coconut

5. Drop the dough in teaspoons onto the baking tray, setting them well apart as they spread

6. Bake the wafers below the center of the oven for about 12minutes (the edges of the wafers should be golden brown while the center is lightly colored)

7. Let the cookies cool slightly before removing them from the baking tray

List of ingredients required:

(makes 18 cookies)

2 oz butter
2 oz plain flour
2 oz caster sugar
1 level tablespoon golden syrup
2 teaspoons lemon juice
1 oz fine desiccated coconut
The oven should be preheated at a temperature of 350F (177C)
