Chocolate Wafers Recipe:

1. Cream the butter and the sugar together until the mixture is light and fluffy

2. Add the rum extract and the egg, beat thoroughly

3. Sift together the flour, baking powder, salt and the cocoa

4. Gradually add the dry sifted ingredients to the cream mixture to make a light dough

5. Roll out the dough about 1/8 inch thick on a lightly floured board and cut it with a floured cookie cutter into rounds about 2 and 1/2 inches in diameter

6. Bake the rounds on an ungreased baking sheet in a hot oven of 400F (200C) for 8minutes

1 and 1/4 cups sugar
3/4 cup butter
1 and 1/ 2 cups sifted flour
3/4 cup cocoa
1 tablespoon rum extract
1 egg
1 and 1/2 teaspoons baking powder
1/4 teaspoon salt
