Chocolate Rum Chiffon Pie

Chocolate Rum Chiffon Pie Recipe:

1. Melt the unsweetened chocolate over boiling water with the tablespoon of strong coffee and stir the mixture until the chocolate is melted and smooth

2. Stir in the sugar, salt and the hot milk and cook for 3minutes while constantly stirring

3. Soften the gelatin in the cup of water

4. Stir the softened gelatin into chocolate mixture

5. Stir the mixture over cracked ice until it is cool and thickened

6. Beat in the rum

7. Fold in 1 and 1/2 cups of the heavy cream into the mixture

8. Pile the mixture into a baked pie shell

9. Decorate the top with the remaining half cup of heavy cream, whipped and pressed through a pastry bag fitted with a fluted tube

10. Sprinkle with the paper-thin shavings of bitter chocolate

2/3 cup sugar
1/2 cup hot milk
1 tablespoon gelatin
2 oz (50g) unsweetened chocolate
1 tablespoon strong black coffee
A pinch of salt
1/4 cup water
2 tablespoons rum
2 cups heavy whipped cream
Paper-thin shavings of bitter chocolate
