Chocolate Pretzels Recipe:

1. Grease 2 baking sheets

2. Sieve the flour, cocoa and cinnamon into a bowl and stir in the sugar

3. Cut the butter into the mixture and rub it in until the mixture resembles fine breadcrumbs

4. Beat the egg yolk with the milk and pour it into the dry mixture

5. Mix the ingredients together to make a dough

6. Roll out the chocolate dough on a floured board and make a rectangle of about 405mm*250mm

7. Roll out the puff pastry to make a rectangle of the same size

8. Brush the chocolate pastry with the egg white and place the puff pastry on top

9. Gently press the 2 layers together with a rolling pin

10. Cut the pastry length-ways into strips of about 15mm wide

11. To shape each pretzel, take an end of a pastry strip in each hand

12. Cross the ends and then join them to the middle of the strip about 25mm apart (they do not have to be perfectly shaped)

13. Place the pretzels on the greased baking sheets

14. Bake the pretzels in the center of the oven for 10 to 15minutes until the puff pastry is golden

15. Transfer to a wire rack to cool

16. Sieve the icing sugar and mix it with enough hot water to make a pouring consistency

17. Trickle the icing across the pretzels

18. Leave the pretzels in a warm place to allow the icing to set before serving

6 oz (170g) plain flour
2 oz (50g) cocoa powder
1/2 teaspoon ground cinnamon
4 oz (115g) caster sugar
4 oz (115g) butter or margarine
1 egg, separated
2 tablespoons milk
8 oz (225g) puff pastry
4 oz (115g) icing sugar
A little hot water

The oven should be preheated to a temperature of 425F (220C)
