Chilled Cherry Soup Recipe:

1. Stalk the cherries

2. Cut the cherries in half and scoop out the stones with a fork

3. Put the cherries, orange juice, sugar and the red wine into a pan

4. Bring the contents to the boil and simmer for 5minutes

5. Remove 2tablespoons of the cherries and set them aside

6. Blend the remaining cherries with the cooking liquid in a liquidizer until the mixture is smooth

7. Pour the blended mixture into a bowl and stir in the brandy

8. Cover the soup and chill for at least 4hours

9. Serve in small bowls and top it with the reserved cherries

12 oz (350g) fresh black cherries
285ml red table wine
150ml fresh orange juice
1 to 2 level tablespoons caster sugar
2 tablespoons brandy
