Carrot and Orange Salad Recipe:

1. Scrub the carrots and thinly slice them diagonally to produce oval slices

2. Peel the oranges and cut out the segments, discarding all the white pith and membranes

3. Peel and finely dice the ginger

4. Mix the carrots, orange segments and the ginger in a serving dish

5. Make the dressing by shaking the dressing ingredients together in a screw-top jar

6. Pour the dressing over the salad and mix well

7. Scatter the poppy seeds over the salad and chill in the refrigerator before serving

List of ingredients required:

(serves 6 people)

1 lb (450g) young carrots
3 medium oranges
25mm piece of fresh root ginger

For the dressing:

1 tablespoon orange juice
3 tablespoons olive oil
Salt and freshly ground black pepper
1 level tablespoon poppy seeds
