Bream Fish Recipe:

1. Peel and thinly slice the onion

2. Peel and crush the garlic

3. Crush the fennel or coriander seeds in a mortar

4. Scale and clean the fish and place it whole in an oiled baking dish

5. Sprinkle the fish with salt and pepper and with juice from half of the lemon

6. Heat the oil in a pan and fry the onion and garlic over medium heat until they are soft and transparent

7. Stir in the tomatoes with their juice

8. Add the parsley, crushed seeds and wine

9. Cook the sauce until it is well blended then season it with salt and pepper

10. Pour the sauce over the fish (if the dish is large, top up with a little water)

11. Cut the lemon into thin slices and lay them on top of the fish

12. Cover the dish with a lid or foil

13. Bake in the center of the oven for about 45minutes

14. Serve the bream in the sauce straight from the dish

List of ingredients required:

1 large onion
1 large lemon
1 large clove garlic
2 to 3 lb bream
1 to 2 level tablespoons chopped parsley
1 teaspoon fennel or coriander seeds
14 or 16 oz tin of tomatoes
4 fluid oz dry white wine
3 tablespoons olive oil
Salt and black pepper

The oven should be preheated at a temperature of 375F ( 190C)
