Beefsteak and Kidney Pie

Beefsteak and Kidney Pie Recipe:

  1. Cut 1 pound beefsteak and 4 veal kidneys in very small dice.
  2. Mix the meat together with 8 sliced mushrooms.
  3. Add 1 large onion and 1 teaspoon parsley, finely chopped.
  4. Add 1 /2 teaspoon Worcestershire sauce.
  5. Add 1/2 cup Madeira and 1 1/2 cups brown sauce.
  6. Cover the filling with any pie dough.
  7. Cut slits in the crust to allow the steam to escape.
  8. Bake the pie in a moderate oven (350ºF) for 50 to 60 minutes or until the pie is browned and the meats are tender.
