Barbecued Spare Ribs

Barbecued Spare Ribs recipe:

  1. Cut 5 pounds lean spare ribs into small serving pieces.
  2. Season with salt, black pepper and paprika.
  3. Arrange them in a glass or enamel vessel with a cover.
  4. Crush 2 cloves of garlic.
  5. Combine it with 1/2 cup Sherry or Madeira and the juice of 1 lemon.
  6. Pour this marinate evenly over the ribs.
  7. Cover and marinate in the refrigerator for a several hours or overnight.
  8. Turn the spareribs once or twice.
  9. Put 2 large onions,  minced, in a saucepan.
  10. Add 1/2 cup finely diced celery.
  11. Sauté the onions and celery in bacon or other fat.
  12. Add 1/2 cup cooked tomatoes.
  13. Add 1/2 cup tomato paste.
  14. Add 1 tablespoon prepared mustard.
  15. 1 tablespoon each of crushed dried thyme and crushed cumin seed.
  16. Add 2 tablespoons each of Worcestershire sauce, sugar and chili powder.
  17. Add 2 finely chopped chili peppers or 1/4 teaspoon Tabasco sauce.
  18. Add 1 cup vinegar.
  19. Mix well and boil for 2 minutes.
  20. Brush the drained ribs with some of this sauce.
  21. Broil the ribs slowly over charcoal until they are well browned, turning and basting with the sauce every 15 minutes.

  • 1 Tablespoon cumin seed, crushed.
  • 2 Tablespoons Worcestershire sauce.
  • 2 tablespoons sugar.
  • 2 tablespoons chili powder.
  • 2 finely chopped chili peppers or 1/4 teaspoon Tabasco sauce.
  • 1 Cup vinegar.
