Barbecued Broilers

Barbecued Broilers.

  1. Select 3 plump broilers.
  2. Remove the backbones.
  3. Neck with a sharp knife so that the halves will lie flat on the grill.
  4. Place the chicken halves in a shallow pan.
  5. Sprinkle them with salt.
  6. Make a marinade with 1 cup olive oil, 1/2 cup white wine, 1 cut clove of garlic and 6 crushed peppercorns.
  7. Marinade the chickens for 30 minutes.
  8. Place the chicken, skin down on the grill about 5 inches from the coals.
  9. Broil for 25 to 30 minutes.
  10. Turn the halves frequently to cook them evenly.
  11. Baste often with marinade.
  12. Melt 1/4 pound butter in a saucepan.
  13. Add 6 shallots, finely chopped, 1 tablespoon each of chopped chives and chervil or parsley.
  14. Also add 1 teaspoon chopped sweet basil.
  15. Bring the butter to a boil.
  16. Pour it while foaming, over the chicken.
