Avocado and Citrus Salad Recipe:

1. Peel the avocados using a stainless-steel knife to prevent the flesh from discolering

2. Cut the avocados into quarters and remove the stones

3. Cut the flesh into thin slices and place them in a bowl

4. Pour the lemon juice over the avocado slices

5. Cut a slice from the top and bottom of the grapefruit and orange so that they stand flat on a board

6. Cut the fruits downwards in narrow strips through the peel and pith and remove

7. With a sharp knife, cut between the flesh and segment skins

8. Put the flesh into a large bowl and squeeze the segment skins over the fruit so that no juices are wasted

9. Carefully blend the avocado and lemon juice with the citrus fruits

10. Spoon the mixture into individual serving dishes and garnish with skinned orange segments and sprigs of mint

Caster sugar
3 large avocados
Juice of a small lemon
