List of ingredients required: (serves 4 people) 1 medium onion, peeled and finely chopped 4 cloves garlic, peeled and crushed 2 bay leaves 1 and 1/2 lb (700g) rump beef, trimmed of fat and cut into 50mm squares 1 level tablespoon ground turmeric 450ml coconut milk 25 mm piece fresh root ginger, peeled and chopped 1 tablespoon sambal oelek Recipe: 1. Put the beef in a heavy-based pan 2. Stir in all the remaining ingredients 3. Cook the ingredients over low heat for about 1 and 1/4hours while the pan is uncovered and stir constantly until the meat is tender and the gravy is quite thick 4. Increase the heat and stir-fry for about 10minutes or until the oil separates from the gravy 5. Lower the heat and continue stir-frying until the gravy coats the meat in a dark crust 6. Turn the meat into a warmed serving dish and serve hot
